Spinachy Pasta (serves 2)

Onion (large): 1
Garlic: 4 cloves
Tarragon (dried): 3 tbsp
Pasta: 100 grams
Spinach (washed): 250g
Cheddar Cheese (grated): 100g
Soft Cheese: 75g


Wash the spinach and allow to drain
Prepare pasta - simmer as per instructions until tender. Drain and keep on one
Slice onion and garlic and saute with half of the tarragon in a little olive oil (use
low heat - only enough to soften the onion) Leave to stand whilst you prepare
the remainder of the dish.
Grate the cheddar and mix with soft cheese
Bring onion and garlic mixture up to heat and add the spinach and remainder of
the tarragon
Heat the mixture through gently.
When the spinach has reduced, add the cheddar and soft cheese and mix in to
make sure all is hot
Finally, stir in the pasta

Serve immediately
